I have been using Silpat mats for years. I am still using the original mats I bought about 6 years ago. They are a time saver when it comes to cleanup. Nothing ever sticks, even the mass of decorating sugars used by my grandchildren when baking sugar cookies.
This is the most amazing mat! Cookies bake just like they were directly on the cookie tray but slide of the Silpat! Same for the sticky sweet buns I made – they just slid off the Silpat. I have been using a silpat pan liner for two years and finally got around to buying a few more so I would be able to make several batches of cookies and french macaroons. It is so much easier to work with than parchment paper, there is simply no comparison. For washing I do not use soap, I rinse with water only, sometimes even a wipe down with a paper towel is enough to clean it.
My only problem has to do with the confusion in sizes of pan liners, there are so many different sizes some only differing by about a quarter of an inch. It would be great if they could “standardize” the sizes and names they give these liners, it would save a lot of time and confusion.
